Les tortugues

Les tortugues

“Unique, restful and epic”

ORIGIN • DO EMPORDÀ •

Originating in the foothills of the Albera Range, this wine faces the same difficulties as the animals it pays tribute to, the Albera tortoises: the ever present fierce Tramuntana wind and the stony, slate-filled soil. Les Tortugues steadfastly overcomes all of these hardships to become a wine with great personality and character, a result of the union between human beings and the natural setting that surrounds them, proof that excellent wines can be made in the Empordà.

VARIETIES

100% Red Grenache.

PRODUCTION AND AGEING

The grapes are harvested just before the ideal point of ripening to achieve high acidity and convert this red-peeled variety into a white wine. The draining method is used to obtain the white free-run juice. Alcoholic fermentation in carried out at low temperature in stainless steel vats to intensify the variety’s characteristic aromas. This is followed by partial malolactic fermentation to achieve greater creaminess and complexity. Once fermented, the wine is left for 6 months with its lees, performing a battonage when the wine requests it. It is then slightly clarified, stabilised and filtered with no products of animal origin. Finally the wine is bottled and aged for a year.

TASTING NOTES

Intense, bright yellow colour with Golden highlights. Varietal aromas of red fruits like raspberry and cherry, accompanying an aroma of apricot jam. Secondary, aromas of baking yeast and dairy aromas of milk and butter, along with the tertiary aromas characteristic of ageing, with delicate notes of oxidation and ripeness. In the mouth it is very creamy and silky, with good, wellintegrated acidity, making it fresh and rich at the same time. It shows good potential for ageing. It has a high and very appealing persistence, further emphasising the fruit aromas.

SERVING

Ideal for accompanying all types of fish and seafood, such as sea bass in a salt crust or a timbale of scorpion fish, and also soft and semi-cured cheeses. It goes very well with rice dishes such as mushroom, risotto, salads, many types of pasta and all types
of white meats. Ideal temperature 8ºC-12ªC.
